Big T’s Goat Extravaganza!
A five course dinner, featuring the culinary possibilities of the world’s most popular protein.

Says Travis: “The reason for my interest in doing this dinner is to bring butchers, the farmers and the people who enjoy these people together. I wanted to showcase off the beautiful goats that the McCormacks have been raising. I feel that we’ve gone too long without having a goat dedicated dinner. It’s about respecting the craft of whole animal butchery and the local farmers who are providing for us. It’s also about starting a forum on the respect that goes along with this mentality. Sourcing local animals that are raised humanely.”

Come celebrate one of our local farm heroes, McCormack Ranch! Jeannie McCormack will be there to share dinner and chat.
6:30pm Cocktail Hour with a specialty drink created by Revival’s bar maven, Nat Harry.
7:30 Dinner begins, courses include house-made salumi and a cheese course

Menu
1st Course:  Goat meatballs in goat, cabbage & fennel brodo
2nd Course:  Goat neck and shank, with Castel Franco chicory, house feta & mint
3rd Course: Goat leg steak with asparagus, favas, braised greens & pickled mustard seed.
4th Course: Goat roulade with kumquat tarragon marmalade
5th Course: Cheese! from Sweetwater Creamery

The Butcher’s Guild and McCormack Ranch will be sharing some stories from the front lines of the meat world, as well as Revival’s Chef, Travis McConnell.
